Pineapple Drop Cookies

1/2 cup shortening
1 cup sugar
1/2 teaspoon vanilla
1/2 cup drained, crushed pineapple
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
Preheat oven to 375 degrees. Using an electric mixer, cream shortening and
sugar. Beat in egg, vanilla, and pineapple. Sift flour, baking soda, and salt
together, and gradually add to creamed mixture. Drop by teaspoons on an
ungreased cookie sheet, flattening each slightly with fingers. Bake 12 to 15
minutes. Makes about 3 dozen.
Tips: Give these cookies a splash of summertime with colored sugar and icing
dots, or add 1 cup fresh coconut for a tropical cookie.
