Angel Date Drops
2 egg whites
1/4 teaspoon salt
1 teaspoon vanilla
3/4 cup sugar
1/2 cup cut up dates
1 cup chopped pecans
1 tablespoon flour
Beat egg whites with salt and vanilla until soft peaks form. Gradually beat in
sugar, beating until stiff peaks form. Sprinkle dates and nuts with the flour;
toss. Fold into egg whites. Drop by teaspoonfuls about 2 inches apart on greased
cookie sheet. Bake at 350° for 10 to 12 minutes.
Makes about 3 dozen meringue cookies.
