Apricot Butter Cookies

Cookies Ingredients:
1 cup butter or margarine, softened
3/4 cup powdered sugar
1 teaspoon vanilla. -
1 1/2 cups Gold Medal@ all-purpose flour
1/4 cup finely chopped dried apricots

Frosting Ingredients:
1/4cup butter or margarine, softened
1/4cup apricot preserves
1 cup powdered sugar

Garnish Ingredients:
3 medium dried apricots, cut into 48 strips


1. Heat oven to 350F (if using dark or nonstick cookie sheet heat oven to 325F). In medium bowl, beat 1 cup butter, 3/4 cup powdered sugar and the vanilla with electric mixer on medium speed until smooth. Beat in flour until well blended. Stir in finely chopped apricots.
2. Shape dough into l-inch balls. On ungreased cookie sheet place balls 2 inches apart.
3. Bake 8 to 12 minutes or until bottoms are light golden brown. Cool1 minute; remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
4. In small bowl, beat 1/4 cup butter and the apricot preserves on medium speed until smooth. Beat in 1 cup powdered sugar until well blended. Spread frosting over cookies. Top each cookie with apricot strip.
