Butter Almond Cookies
1 Cup butter
3/4 Cup sugar
2 Cup unbleached white flour
2 Dozen whole almonds, blanched or toasted
1/4 Cup confectioners sugar for dusting
Cream butter and sugar and mix well. Gradually add the flour until the dough can
be handled. With lightly floured hands, shape the dough into round cookies about
1 1/2-inches in diameter and 1/4 to 1/2-inch thick. Lightly press an almond into
the center of each cookie. Place cookies on an ungreased cookie sheet about
1-inch apart. Bake at 300 degrees for about 20 minutes, until cookies are
golden. Allow cookies to cool slightly and then dust with confectioners sugar.
Makes about 2 dozen.
