3/4 cup sugar
1 cup coconut
1 t. vanilla
1 cup dates, chopped (NOT the prechopped ones, they're covered in sugar already
and make the cookies too sweet)
1 cup walnuts
1/4 t. almond extract
Mix everything together in an electric mixer. Pour into an ungreased 2-qt.
casserole dish and bake at 350 degrees for 30 minutes. Stir when removed from
oven. Cool mixture and form into small balls. We roll them in coconut but you
could use sugar or chopped nuts.
