Cherry Macaroon Cookies Recipe

Cherry Macaroon Cookies


2/3 cup shortening
3/4 cup sugar
1/2 teaspoon Salt
3/4 teaspoon almond extract
1/2 teaspoon grated lemon rind
1 egg, unbeaten
1 3/4 cups sifted all purpose flour
1 teaspoon baking powder
1/2 teaspoon soda
1/2 cup maraschino cherries, cut in pieces
3/4 cup shredded coconut


Preheat oven to 375 degrees
Combine shortening, sugar, salt, almond extract, lemon rind, and egg and beat thoroughly. Sift flour with bak­ing powder and soda; add to shortening mix­ture and mix well. Add cherries and coconut and blend. Drop rounded tablespoons of dough on greased baking sheets. Bake in moderately hot oven (375°F.) 10-12 minutes.
Makes 2 1/2 dozen
