Orange Cream Chips
Ingredients:
2 1/4 c. sifted flour
1/2 tsp. salt
1 c. vegetable shortening
1 c. sugar
1 (3 oz.) pkg. cream cheese, softened
2 eggs
2 tsp. orange juice
1 tsp. orange rind, grated
1 (6 oz.) pkg. semi-sweet
chocolate chips
Method:
Preheat oven to 350 degrees. Lightly grease cookie sheet. Sift flour and salt
into wax paper. Beat shortening, sugar and cream cheese. Beat in eggs, 1 at a
time. Add juice and rind. Blend in flour mixture. Stir in chocolate. Drop dough
by rounded teaspoonful 2-inches apart. Bake in preheated 350 degrees oven for 12
minutes. Cool on racks. Spread tops with icing. Garnish with thin strip of
orange rind, if desired.
Icing for Orange Cream Chips:
2 c. confectioners sugar, sifted
3 oz. softened cream cheese
1 tsp. orange juice
1 tsp. orange rind
Gradually beat sugar into softened cream cheese until well blended. Stir in
orange juice and rind. Spread tops of cookies with icing.
