Glazed Apple Cookies
Ingredients:
1/2 Cup margarine
1 1/3 Cups brown sugar
1 egg
2 Cups flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cloves
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 Cup apple juice or milk
1 Cup chopped nuts
1 Cup raisins
1 Cup chopped raw apple
Glaze:
1 Tbsp. margarine
1 1/2 Cups powdered sugar
2 1/2 Tbsp. apple juice or milk
1/8 tsp. salt
1/4 tsp. vanilla
Method:
Cookies:
Thoroughly cream margarine and sugar. Add egg and beat well. Sift together
flour, soda, cinnamon, cloves and nutmeg. Add to the creamed mixture alternately
with liquid. Stir in nuts and raisins then fold in apple. Drop from spoon on
greased cookie sheets. Bake at 400 degrees for 10 to 12 minutes. Remove cookies
from pan at once and cool on cake rack. Cookies are very tender while warm.
Makes 24 five inch cookies.
Glaze:
Cream margarine and sugar; add salt. Stir in liquid and add vanilla. Glaze while
cookies are hot
