Key Lime Butternut Cookies

Ingredients:
1 1/2 teaspoon cornstarch
1 cup all-purpose flour
1/2 teaspoon salt
3/4 teaspoon baking powder
1/2 cup (1 stick) butter
1/2 cup granulated sugar
1 egg yolk, slightly beaten
2 teaspoons Key Lime juice
grated zest of 3 key limes, or zest of 1 lime
1/2 cup chopped walnuts
Method:
Preheat the oven to 375 degrees F. In a medium size mixing bowl, sift together
the cornstarch, flour, salt and baking powder. In another mixing bowl, cream the
butter with the sugar until smooth, fluffy and light, then add in the yolk. Key
Lime juice and the zest. Slowly add in the sifted ingredients, continuing to mix
after each addition. Mix in the walnuts. Drop by teaspoonful onto lightly
greased cookie sheet, leaving about 2 inches between each cookie. Bake for about
8 to 10 minutes until edges are lightly browned. Cool.
This recipe makes 3 dozen cookies.
