Kona Coast Macadamia Cookies

1 1/2 cups sifted whole wheat flour
1/2 teaspoon baking soda
1 1/3 cups packed brown sugar
2/3 cup unsalted butter
1/4 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon instant espresso powder
3 (1 ounce) squares unsweetened chocolate
3/4 cup halved macadamia nuts
Preheat oven to 350 degrees F. Grease cookie sheets.
Cream butter and brown sugar. Add the eggs, one at a time, beating well after
Beat in espresso and vanilla. Mix until well blended.
Slowly sift in whole wheat flour, baking soda and salt.
Melt chocolate in double boiler over low heat. Let cool to room temperature.
Stir into mixture.
Add in nuts and mix until well blended.
Drop 3 inches apart on cookie sheets and bake for 12 minutes or until crisp
