 Lady Baltimore Cookies

Inspired by the elaborate South Carolina cake made famous in Owen Wisters 1906 novel, "Lady Baltimore," these delicate cookies are pure gems. It was one of dozens created for a tour of the nation in cookies for Christmas Cookies Magazine.
Prep: 45 min. Marinating: 1 hour Baking: 10 min.

1/2 cup shortening
1/2 cup butter or margarine
2 cups all-purpose flour or wholewheat pastry flour
3/4 cup sugar
1/3 cup milk
1 1/2 teaspoons finely shredded lemon peel
1 teaspoon almond extract
Lady Baltimore Frosting*


Preheat oven to 375.
Beat the shortening and butter in a large bowl using an electric mixer on medium to high speed for 30 seconds until softened. Add half of the flour; beat in the sugar, milk, lemon peel, and almond extract. Beat in rest of flour till thoroughly combined. Drop by rounded teaspoons 2 inches apart onto ungreased cookie sheets. Bake in a 375 oven for about 10 minutes just until lightly brown. Remove cookies with a spatula and cool on wire racks. Frost with Lady Baltimore Frosting.

Makes about 48.

* Lady Baltimore Frosting: Chop 4 dried black figs and 1/3 cup raisins; place in a small bowl with 2 tablespoons brandy or rum. Let sit at least an hour. Place 2 egg whites, 1/2 cup sugar, pinch salt, and 1/4 cup light-colored corn syrup into the top of a double boiler over gently simmering water. Beat with an electric mixer on high for 7 minutes till soft peaks form. Beat in 1 teaspoon vanilla and continue to beat till spreading consistency. Stir in reserved fruits and 1/3 cup finely chopped pecans
