Lemonade Cookies

Ingredients:
I have also used lime-ade and other fruit juice concentrates for these. It's
interesting to see just what kind of bar or cookie you'll come up with!
1 1/4 cups sugar
1 1/4 cups butter, softened
2 eggs
3 cups all-purpose flour
1 tsp. baking soda
1 6-oz.can frozen lemonade OR orange juice concentrate (reserve 2 Tbsp. for
frosting)
Frosting:
3 cups powdered sugar
1/2 cup butter, softened
2 Tbsp. reserved frozen concentrate
1 tsp. vanilla
1 - 2 Tbsp. milk
Method:
1. Heat oven to 400°F. In large mixer bowl combine 1 1/4 cups sugar, butter and
eggs. Beat at medium speed, scraping bowl often, until creamy, (3 to 5 minutes).
Reduce speed to low. beat, gradually adding flour, lemonade concentrate and
baking soda and scraping bowl often, until well mixed (1 to 2 minutes).
2. Drop dough by rounded teaspoonfuls onto cookie sheets. Bake 8 to 14 minutes
or until edges are lightly browned. Cool completely.
3. In small mixer bowl combine all frosting ingredients EXCEPT milk . Beat at
low speed, scraping bowl often and adding enough milk for desired spreading
consistency. Frost cooled cookies; sprinkle with colored sugar if desired.
Makes 4 dozen
For bars - spread dough in greased 9x13 cake pan. Bake at 400 F about 25 minutes
(check for done ness with toothpick or clean broom straw). Meanwhile, mix only
1/2 batch of frosting - immediately after bars come out of the oven, spread the
frosting on top. It will melt into all those nooks and crannies and turn into a
glaze. Cool completely before cutting.
