My Mom always made a cookie similar to fact made them for my wedding along with many other varieties.... This is almost as good as I remember from my Mom... I found a recipe for a pineapple filling that you could use with any cookie recipe which has a filling. Mix 1 cup crushed pineapple and juice (8 1/2 oz can), 1 cup sugar, 2 1/2 tablespoons cornstarch, 1 tablespoon butter and 1 cup water in saucepan. Cook until thickened, cool. I found a recipe for filled cookies made with cream cheese. It's called Gateau Bonbons. Here it is:

2/3 cup soft butter or margarine
1 cup sugar
1 egg
1 package (3 oz) cream cheese, softened
1/2 tsp lemon juice
1 tsp finely grated lemon rind
2 cups flour
1/2 tsp baking powder
1/2 tsp salt
1/8 tsp soda


Mix first six ingredients until light and fluffy. Blend dry ingredients; add to butter mixture and mix well.
Chill. Heat oven to 350. Using 1/4 of dough at a time (keep rest refrigerated) roll 1/8 thick on lightly floured board. Cut 1" or 1 1/2" rounds. Place half of the rounds on lightly greased baking sheet. Put 1/4 tsp filing in center of each if using 1" cutters. For 1 1/2" cookies, use 1/2 tsp filling. Cover with remaining half of rounds. Seal edges with floured finger. Bake 8 to 10 minutes or until edges are lightly browned. When cool, the recipe suggests frosting with a tinted icing.
