Pumpkin Cookies
Ingredients:
1 1/2 Cups sugar
1 Cup softened butter or margarine
1 Cup cooked pumpkin
2 tsp. vanilla
2 eggs
1 tsp. baking powder
2 Cups all-purpose flour
2 1/2 tsp. pumpkin pie spice
1/2 tsp. salt
1/2 Cup raisins
1 Cup chopped nuts
Method:
Heat oven to 350 degrees. In large bowl, combine sugar, butter or margarine,
pumpkin, vanilla and eggs. Blend well with mixer, then add dry ingredients. Stir
in raisins and nuts. Drop by spoonfuls on ungreased baking sheet. Bake for 12 to
15 minutes. Do not overbake. Cookies should be soft. Cookies can be iced.
