Crumb Topped Cod
Ingredients:
1 lb. Cod fillets, thawed if necessary
melted butter or margarine
1/4 cup fine dry bread crumbs
1 tbsp. chopped parsley
1/8 tsp. each salt, pepper and paprika
lemon wedges
Method:
Cut cod into serving-size pieces. Coat on all sides in about 3 tbsp. melted
butter. Place in baking dish. Combine bread crumbs, parsley, seasonings and 1
tbsp. melted butter. Sprinkle crumb mixture over cod. Bake at 450 F 8 to 10
minutes or until cod flakes easily when tested with a fork. Serve with lemon
wedges. Recipe may be halved.
Makes 4 servings.
