Baked Fish with Crispy Herbed Shrimp

This is a delicious company dinner for your fish loving friends. Since the fish
has to marinade anyway, it's a good make ahead dish to then just pop in the oven
at dinnertime.
1/4 cup fresh lemon juice
1/2 cup dry white wine
1 clove minced garlic
1/2 cup olive oil
4 red snapper fillets or similar fish
1/2 lb fresh shrimp , cooked, shelled and chopped
1/4 cup minced onions
1 clove minced garlic
1/4 cup minced parsley
1 tablespoon chopped caper
1/4 teaspoon dried basil
1/4 teaspoon dried tarragon
1 cup dry breadcrumb
1/4 cup mayonnaise
1/3 cup freshly grated parmesan cheese
lemon wedges (to garnish)
1. Make the marinade: Whisk together the first four ingredients, adding salt and
pepper to taste Place the fish in one layer in a baking dish, skin side up.
2. Pour all but 1/4 cup marinade over the fish and let them marinate, covered,
in the refrigerator for 3 hours.
3. Stir together the shrimp, onion, garlic, parsley, capers, basil, tarragon,
crumbs, mayonnaise, Parmesan and the remaining marinade.
4. Salt and pepper to taste, and mix until combined well.
5. Bake the fillets in the marinade, skin side down, in the middle of a
preheated 400 degree oven for 10 minutes.
6. Spread evenly with the topping and cook for 10 minutes more, until topping is
light golden brown.
7. Serve with lemon wedges.
