Sole In Herbed Butter
4 tablespoons butter or margarine, softened
1 teaspoon fresh dill weed, minced
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon white pepper
2 pounds sole fillets
fresh dill
lemon wedges
Melt the butter in a skillet over low heat. Add dill weed, onion
powder, garlic powder, salt and pepper and increase heat to medium.
Lay the sole fillets in the bubbling butter, salt lightly, and saute
for 2 minutes. Turn carefully and finish cooking until the fish is
just flaking when tested with a fork. Transfer to a platter and
garnish with dill and lemon wedges.
