Weight Watchers Shrimp Salad Recipe

1 lb. shrimp, large, peeled and de-veined
1/3 cup fat-free mayonnaise
2 medium stalk celery, chopped
3 Tbsp. red onion, minced
2 Tbsp. parsley, fresh, chopped
1 Tbsp. capers, drained
2 tsp. Dijon mustard
1/8 tsp. table salt, or to taste
1/8 tsp. black pepper, or to taste

Boil shrimp in a large pot of rapidly boiling water for about 2 minutes, until bright pink and cooked through. Drain, rinse under cold water and drain again; set aside.

In a large bowl, combine mayonnaise, celery, onion, parsley, capers
and mustard; mix well. Stir in shrimp; season to taste with salt and
pepper. Serve at room temperature or chilled. Yields about 1 1/2 cups
per serving. (Note: This preparation method also works well with
cooked, cubed chicken breast.)

Chef Tips:
We renovated Shrimp Salad by using fat-free mayonnaise instead of the full-fat original and adding salty capers for additional flavor.
