Weight Watchers Zesty Tomato Salad Recipe


Take advantage of summer's best pickings by using a variety of tomatoes in this salad, like heirloom, grape and pear.

4 medium tomatoes, chopped into 1/2-in. pieces OR 2 pints smaller tomatoes
1 medium cucumber, seeded and chopped into 1/2-in. pieces
1/2 medium red onion, chopped into 1/2-in. pieces
1 tbsp. lemon peel
1/2 tsp. table salt
1/4 tsp. black pepper

In a large bowl, toss together all ingredients. Allow to stand for at least 20 minutes.

Yields about 1 cup per serving.
